Cancer, heart disease, and stroke are thought to be prevented effectively through the use of antioxidants. The USDA (United States Department of Agriculture conducted a study by Agricultural Research Service researchers who found that “natural cocoa powders contained the highest levels of TAC and procyanidins, which were found to be the dominant antioxidant in chocolates”. Their conclusion was “chocolates containing higher amounts of cocoa ingredients have higher procyanidin contents, therefore, higher antioxidant capacities”.
